Happy Cinco De Mayo // The Ultimate Superfood-Spiked Guacamole (Recipe!)

When it comes to celebrating Cinco De Mayo, we have only one request: there must be guac involved. Lots and lots of guac. It's hard to imagine life without the avocado. From their seductively creamy texture, to their wealth of beneficial nutrients ranging from heart healthy monounsaturated fats, to antioxidants Vitamin E and lutein, as well as more potassium per serving than bananas. Not to mention they just taste so dang good. We love using them in smoothies to add a thick and creamy texture without added sugar, and you can't go wrong with a chocolate avocado pudding, however, when it really comes down to it, guacamole has got to be our favorite way to enjoy this super-fruit (and Mexican food staple).

We decided to give this classic recipe a superfood spin with a solid dose of our nutrient-loaded, "Nature's Multivitamin", Amazing Algae powder from Veggimins. The flavor of the Amazing Algae is in no way overpowering, and actually enhances the flavor of the guacamole (in our humble opinion). It also gives the color an even bolder green hue, and helps mask the browning effect that occurs almost immediately when guacamole is exposed to air. Amazing Algae is rich with a plethora of vitamins, minerals, and phytonutrients ranging from calcium, potassium, magnesium, B vitamins, and iron. It also offers a wealth of amino acids (a complete protein), and helps aid in maintaining alkalinity, and in the body's detoxification processes. The Recipe

The Ultimate Superfood-Spiked Guacamole 

Ingredients

3 ripe Hass avocados

1/3 cup red onion, diced 

1/2 cup roma tomatos, diced

1/2 cup chopped cilantro, chopped

3 tbs lime juice

1 tsp Veggimins Amazing Algae

3/4 tsp cumin

1/4 tsp smoked chipotle spice or cayenne (optional)

1-4-1/2 tsp Himalayan pink salt to taste

Optional: 1 small clove garlic

Instructions

1. Slice into avocados, remove pits, and place in bowl. Mash until creamy but still slightly chunky.

2. Add in onion, tomato, lemon, cilantro, spices and salt and mix. Add more spice or salt to suite your taste buds.

3. Add in Amazing Algae last and stire briefly. Enjoy with veggie sticks, organic corn chips, rice crackers, on top of a salad, in a burrito, on some tacos, you get the idea...it's guac! ENJOY!
