Chocolate is a multi-billion dollar global industry, and as the health benefits of dark chocolate (think antioxidants and heart-healthy flavonols) get more mainstream attention, consumer demand is growing at an unprecedented rate, and we need to make sure we're educated about where our chocolate is coming from.
