Summer Dreaming // Tropical Lemon Coconut Mousse with Probiotics (Recipe!)

Summer is so near we can almost taste it, or in this particular case, literally taste it because this recipe is like a summer vacation in a glass. These ingredients were originally destined to become an ice cream or sorbet, but the result turned out almost like a pudding, but even more silky and mousse-like. Pretty delicious! As summer is just a little over a month away, we've been taking every opportunity possible to sneak in a little extra dose of Sunbiotics; a daily dose of probiotics will work miracles in terms of regulating digestion and banishing bloat. The mango makes this recipe nice and dense, while the addition of just 1/2 small avocado gives it that mousse-like silkiness (and you won't be able to detect any avo flavor, we promise). The flavor combo of mango, coconut, vanilla and a hint of lemon zest is delicious and uplifting, and the perfect inspiration for summery daydreams. 

The Recipe

Tropical Lemon Coconut Mousse  

Serves 1 
 
Ingredients
 
2 cups frozen mango chunks
1 fresh champagne mango (now in season - check your local Whole Foods and make sure it's ripe!)
1/2 small Hass avocado  - ripe but not overripe 
1/4 cup coconut milk, unsweetened
1/2 tsp lemon zest 
1/2 tsp vanilla extract
 
Optional: a drizzle of raw honey or sweetener of choice. The sweetness of the recipe will really depend on the ripeness and sugar level of your mango. 
 
 
Instructions
 
1. Blend until smooth, and then blend just a little more for the ultimate silky mousse-like consistency.
