Homemade Raw Vegan Coconut Cream Yogurt (Recipe!)

There's no question about it, ingesting probiotic-rich foods on the daily is not only great for your gut, but for your entire body and health in general. Probiotics aid in everything from building up a strong immune system, to the creation and absorption of key nutrients such as Vitamin B12, and of course ensuring smooth sailing digestion from start to finish. And while taking a dose of Sunbiotics is easy enough to do (and even downright delicious thanks to 100% organic, superfood-based ingredients that taste like real food...because they actually are!), sometimes it's fun to incorporate that daily dose into a yummy recipe to mix it up a bit. 

While yogurt is one of the first things people think of when they think of probiotic-containing-foods (shout out to our friend lactobacillus!), many people look to avoid dairy these days for health reasons. The alternative is to go the non-dairy route, yet while many dairy-based yogurts are available with a pretty basic list of ingredient (whole milk, sugar, vanilla, probiotics), many vegan alternatives contain a lot of additives like gums, emulsifiers, synthetic vitamins, and loads of sweeteners. If you're like us, and tend to avoid these types of ingredients, making it at home fresh will be your best bet. And you get the added benefit benefit of even more nutrition because its raw!

The Recipe

Homemade Raw Vegan Coconut Cream Yogurt

Serves 2

Ingredients

The meat of 1 young Thai coconut (or between 3/4- 1 cup coconut meat in total)

1/3 cup cashews, soaked or unsoaked (use soaked if you are using a standard, non-high speed blender)

1-1.5 Tbs sweetener of choice (maple syrup, agave nectar, coconut nectar, honey, or stevia drops for sugar- free version)

2 Tbs lime or lemon juice

3/4 tsp vanilla extract 

2 servings of Sunbiotics Vanilla Probiotics with Prebiotics Powder (1/3 tsp x 2)

1/2 cup coconut water (or to desired consistency) 

Instructions

1. Simply blend all ingredients aside from the probiotics until smooth. Then add in probiotics and blend again briefly. Enjoy!
