Probiotic-Enhanced Raw Vegan Coconut Caramel Pudding (Recipe!)

Caramel and coconut...delicious on their own, yes, but even better together. In honor of this awesome flavor combination we decided to whip up a Thai coconut-based pudding inspired by it. This dessert is just perfect - not too sweet (sweetened with just 3 dates) but somehow so satisfying. After-all, pudding is kind of the ultimate comfort food. We also blended in a few doses of our Sunbiotics Vanilla Probiotic Powder, because the flavor blends perfectly with the pudding, and who can complain about getting an extra 20 billion CFU's of immune-boosting and tummy-loving probiotics along with their dessert. We mean really. 

Eat this up on its own, or go even more all-out with some crumbled Rawmio Salted Coconut Caramel and Crushed Cashew Bark on top. 

The Recipe

Probiotic-Enhanced Raw Vegan Coconut Caramel Pudding (Recipe!)

Serves 2  

1 cup young Thai coconut meat, packed  
 
1 Tbs Dastony Stone Ground Coconut Butter, gently melted (or if it's warm enough the butter may already be in a liquid state)
 
3 large juicy medjool dates, soaked (use 4 if you have smaller dates) 
 
1 Tbs lucuma 
 
1 tsp mesquite 
 
Pinch Himalyan sea salt 
 
1 tsp vanilla extract 
 
 
1/2 cup coconut water or pure water 
 
Instructions
 
1. Blend all ingredients except coconut butter until smooth. Add in melted coconut butter and blend again briefly. Top with a Rawmio Gourmet Raw Chocolate Bark of your choosing - we used our Salted Coconut Caramel and Crushed Cashew Bark (optional but highly recommended!). DIG IN!
