Low Sugar, Nutrient-Dense Superfood Ice Cream (Recipe!)

Getting over the hump(day) with SUPERFOODS. It's the only way to do it. Give this creamy frozen superfood treat a try the next time your mind says Ben and Jerry's but your body says "nutrients and energy, please!". It's rich in healthy fats and protein, is very low glycemic, and is bursting with vitamins and minerals, so you'll have the energy needed to tackle your busy hectic Wednesday, no problem. Great for post or pre work out booster, or even a healthy dessert (you might want to bump up the sweetener for that). Enjoy!

The Recipe

Low Sugar, Nutrient-Dense Superfood Ice Cream

Serves 1

Ingredients

2 cups frozen berries (we used a mixture of strawberries and blueberries)

1/2 cup nut milk - preferably homemade and raw (check out our RawGuru Nut Milk Bags!)

1/4 avocado

1 heaped tsp lucuma

1/2 tsp moringa powder (one of nature's multi-vitamins!)

1 tsp honey (or more to taste)

1/2 tsp vanilla

Optional: plant protein powder of choice (we love Sprout Living)

Toppings: fresh berries, hemp seeds, chia seeds, granola, sprouted buckwheat, and of course Rawmio Chocolate Covered Cacao Nibs (the bomb.com). Enjoy!

Instructions:

1. Blend it up! You might need to stop your blender and stir a few times between blends so that the blades can catch. You can also use a food processor. There is very little liquid in this recipe so that the consistency stays dense and frozen like ice cream or frozen yogurt.
